Chef Game For Spot At Sports Venue

Chef Ray Garcia is bringing the Mexican flavors of his downtown L.A. restaurant BS Taqueria to a concession stand at the Staples Center.

He is the third high-profile local chef to partner with the Anschutz Entertainment Group-owned arena and its Chicago-based restaurant operator Levy Restaurants, joining Ludo Lefebvre and Josiah Citrin, who have opened stands slinging fried chicken and gourmet hot dogs, respectively.

Garcia’s other two restaurants – the original BS Taqueria and the more upscale Broken Spanish, also downtown, both opened last year.

The stand, which opened last month, serves some of the flagship’s hits such as carnitas, carne asada, and chicken tacos as well as its heirloom corn tortilla chips and churros with chile chocolate sauce. Beverages are available, too, from the standard margarita to blackcurrant lemonade.

Garcia said the partnership with Levy, which approached him to open a space at the Staples Center, allows him to use the same vendors to ensure the taste and quality of his products are consistent with his restaurants.

“It’s imperative that the ingredients are proprietary to us,” he said. “The important ingredients like our masa separate us from a lot of other restaurants because it’s an heirloom non-GMO corn from Mexico. That’s what sets us aside from just getting already processed tortillas from a pack.”
